Emilia Klapp, R.D., B.S. was born and raised in Madrid on your typical Mediterranean diet. Growing up as the daughter of a tailor, she led an active lifestyle and ate a hearty diet of mostly fish, some chicken and lamb, dry beans, lentils, chickpeas, lots of fruits and vegetables, and of course plenty of olive oil. After moving to the United States as an adult she became aware of how lucky she was to have been raised on a lean protein high-nutrient diet. Loss of friends to unexpected disease and the awareness of her own lack of “good choices” as an adult lead her to becoming a registered dietitian.

The Diabetes Club has three purposes:

  • Teach you what nutrition and science has proven to be the best course of action for diabetic health
  • Help you to lower your blood sugar and lose weight
  • Show you that a healthy life does not mean depriving yourself

Emilia brings the Mediterranean influence into the site, expanding on the now proven fact that the healthy diet that was natural to her homeland is in fact the way everyone should eat.

Mediterranean Diet = Diabetic Meal Plan

Although Emilia ate “right” as a child, it was out of necessity, not so much by choice. Today the key characteristics of a Mediterranean diet are the foundation of many diet plans including the ideal diabetic diet plan.

  • Abundant fruits, vegetables, legumes, nuts, whole grain cereals and whole grain breads. (If you are diabetic, do not eat more than 3 pieces of fruit a day.)
  • Extra virgin olive oil as the primary source of fat
  • Low intake of saturated fat and trans fats
  • Low amounts of dairy products
  • Fish, poultry, and eggs a few times a week
  • Red meat only a few times a month
